| Perfect pancakes from scratch |
My part time status as a parent is because we have no children of our own but we seem to collect them none the less. I am godfather to six kids and uncle to dozens more. My youngest godson has stayed with us one night a week since he was a year and a half, he'll be ten in March. So our learning curve has been a bit slower than the usual parent - we are getting a few details under our belts.
Back to breakfast, no it isn't fresh fruit and or a 'health food' but it is something that he will eat, if you know what I mean. So I'll make the pancake mix and then while my coffee is brewing and the pan is warming up I'll head to his bedroom to wake him up. We bought him a bunk bed with only a top bunk so there is more play area in his room. In order to reach him we have a step ladder by the bed for us. In the morning I turn the hall light on (so it doesn't blind the poor kid right off the bat), climb the step ladder and scratch his back until he is awake enough for me to tell him that its time to get up. This takes any where from one to a few minutes. It was only recently when I was scratching his back one afternoon that he told me that I was about to put him to sleep. Again, with my part time status I'm a little slow on the uptake, but seriously I scratch the kids' back every morning we have him for years and just now realize that it has been putting him back to sleep!
So I go back in the kitchen once he is up and put the pancakes on so he can eat them when they are fresh and hot. The extra pancakes were the prized possessions that I saved for my wife. She gets up really early and is at work before I ever get out of bed. So she gets to have day old pancakes, lucky girl! She finally suggested that I freeze the remaining pancakes for Kaleb to eat later. Once again, yes I am very slow on the uptake with this make it easy to raise a child thing.

Pancake Recipe
1 1/2 Cup Flour, self-rising
1/2 Cup Sugar
1 Egg, medium
1 Cup Milk, approximately
1 1/2 tsp Vanilla
Combine the flour and sugar then add the egg and vanilla. Slowly add the milk until the mixture is smooth with a thick liquid consistency (this may take a little less or a little more based on how thin you like your pancakes).
Place skillet over medium heat and once hot add butter or cooking spray. Pour about 1/4 cup pancake mixture per pancake.
