Prepare a 9 inch pie crust (see pie dough recipe)
2 - 3 Bananas, medium
2/3 Cup Sugar
1/2 Cup All-Purpose Flour
1/2 tsp. Salt
2 Cups Milk
3 Egg Yolks, medium
2 Tbl. Butter
2 tsp. Vanilla
Meringue (see Meringue recipe)
Peel and slice the bananas into the bottom of the baked pie crust.
In the top of a double boiler combine the sugar, flour and salt. Add the milk, stir and cook (over the double boiler, not in the boiling water) for 10 minutes or until it thickens.
Remove this from the heat. Beat the egg yolks slightly. Stir half of the hot mixture into the egg yolks until it is smooth. Add the rest of the egg yolks and continue to stir until smooth and thickened.
Remove from the heat. Add the butter and vanilla and stir well.
Allow the banana cream to cool a little before pouring onto the bananas in the pie crust.
Top with meringue. Brown the meringue in the oven just long enough to turn it golden brown.
